I found some cheap muffin mix at Palace and totally forgot to take a photo of the package. But I did take a photo of the results, which were very ordinary. I think I gave the second of the two packages I bought away sef. It’s not that good.
This is all from last year around October. I’m cleaning out my folder of food photos and other things, and in some cases I won’t remember what exactly it is and why I cooked it, if indeed I was the one who cooked it. Some of the photos may come from WhatsApp.
Anyway, these particular muffins were way too sweet for my taste. They had a rather pasty texture even after being in the oven for a while, and yet they were a bit dry. No wonder Palace was selling them on sale for about 2 cedis a pack. I really wish I had taken a picture of the packaging to warn others. Too bad. But I remember it was from Pillsbury and had something about chocolate chips on it. Even for 2 cedis, it’s not really worth it.
Either that, or you can buy the mix and dress it up. IIRC the recipe on the back called only for milk, but maybe adding an eggs, some grated orange zest or nutmeg and other flavourings might take this to the next level. As it was, it was a punishment to my stomach. If you’re going to eat something unhealthy like cupcakes, at least it should be tasty, right? Well, so much for that.
