Pork fajitas with natural yogurt and homemade salsa!

Just a picture for today. I’ll post a recipe some other time.

Will note a few things though:

  1. Ghanaian green peppers tend to be bitter. This one wasn’t, but that’s because I tasted a little bit of several green peppers to find one that was vaguely sweet. If you can afford it, it’s worth spending a little extra to buy imported bell peppers from Shoprite.
  2. Most fajita recipes call for sour cream, but TBH I haven’t seen any sour cream on sale anywhere in Ghana. You can make your own pretty easily with regular cream, but it’s much cheaper and just as tasty to use natural yogurt instead.
  3. No guacamole because avocados weren’t in season and I’m not that big a fan anyway.
  4. You can put pretty much anything you want in a fajita. Chicken is especially good. Next time I’m going to try adding some mushrooms with the meat and shredding a little fresh lettuce on top as garnish.
